OTTOMAN PİLAF
One of the traditional fruit pilafs of
Ottoman cuisine, created by combining
fruits with cinnamon, onion, and pieces
of meat.

SULTAN RESHAT PİLAF
In Ottoman cuisine, as was the custom, if a sultan liked
a dish very much, that dish would be named after
that sultan. This is how Sultan Reşat pilaf was named.
Rumor has it that during the Ottoman period, a British
ambassador was a guest of a pasha and ate pilaf there.
He liked this pilaf so much that he asked his cook to
learn the recipe and made the pilaf for the ambassador
using the recipe he received. When the ambassador could
not enjoy the taste the pasha had there, he scolded his cook
and informed the pasha of the situation. After this situation,
which almost caused a diplomatic crisis, the pasha called his
cook and got angry because he did not give the recipe properly.
His cook said that he gave the recipe and made the recipe on the
spot with the same recipe and repeated the recipe to the pasha;
rule of rice, rule of water, rule of oil and rule of salt. This rice,
flavored with tiny meatballs and tomato sauce, is served with yogurt.
