                                            SOĞURME


     It is a local flavor of the Southeastern Anatolia Region,
     especially the province of Şanlıurfa, and takes its name
     from the preparation of roasted eggplants by mashing
     them. The flavor, which is created by pouring ground
     meat roasted with plenty of oil and spices over roasted
     garlic eggplant paste, is served with garlic-mint yoghurt
     and seasonal greens.
